Pho and banh mi may be the global ambassadors of Vietnamese cuisine, but tré trộn is the kind of humble street food that lives in memory. For many Saigon locals, it is more than a snack – it is a sensory flashback to school days, street corners, and after-class cravings.
Tucked away in a quiet alley off Tran Van Dang Street in District 3, Cô Lan’s tré cart doesn’t stand out at first glance. There is no signboard, just a few plastic stools, a metal table, and the soft hum of daily life. But what she serves has the power to stop you in your tracks: a bowl full of flavour, texture, and unmistakable heart.
Tre is a traditional fermented pork dish with roots in Central and Southern Vietnam. Made by seasoning shredded pork with garlic, sesame, and spices, then wrapping it in banana leaves to ferment, tré has long been a festive food. Over time, street vendors in Saigon gave it a twist serving it as a mixed salad with fresh herbs, pickled fruits, and tamarind fish sauce. The result is tré trộn: a tangy, spicy, crunchy, umami-packed dish that hits every corner of your palate.
At Cô Lan’s cart, the tré trộn comes fully loaded. Shredded tré pork, nem chua (fermented pork rolls), pork sausage, sliced green papaya, crispy rice crackers, pickled young ambarella (cóc non), herbs, roasted peanuts, and a punchy tamarind fish sauce that lingers in the best way. It is the kind of dish you finish and immediately think about ordering again.

Mrs.Lan, the woman behind the cart, works with quiet speed and an ever-present smile. She might ask you where you’re from, joke about your spice tolerance, or share how long she’s been selling tré. Regulars say she remembers not just their names, but exactly how they like their order. There is a warmth to the place that makes it feel like more than just a food stop it feels like coming home.
Tre Tron may never appear on a five-star tasting menu, but that is exactly its charm. It is everyday food with extraordinary soul. And like many of Saigon’s best street eats, it thrives not because of flashy presentation, but because it makes people feel something.
